Food is critical to me. To start with, it is my profession, as a chef i always have to make sure that every single ingredient is alright, then it is my hobby, i often enjoy to experiment brand-new recipes, browse the net on all types of lovely food related information.

People constantly ask me, what would be a balanced nutrition, especialy ladies and my reply is frequently the same, good ol' fresh organic food and quit feeding on junk from McDonalds. If you wish to live healty then take care of yourself.

How great to be at a lesson by Chef Tanigawa! Also, combination of Furosen and funazushi is really one of the best pairing I've had. Thanks for the wonderful post!

The bamboo-wrapped one, is that steamed? Does the bamboo impart much flavor to it?

I've been so curious about funazushi ever since seeing a Japanese documentary on fermented foods. The sushi making day looks like it was amazing. Aside from inarizushi, I don't think I've ever had Kyoto style sushi before.

Funazushi is amazing stuff. If you love strong cheese you will be a fan. My in laws make their own but it is difficult to get funa these days as they are being eaten up by black bass transplanted from Michigan to Lake Biwa. Apparently the Emperor enjoyed fishing the black bass and had them imported to disastrous effect. The problem has been immortalized in song by the Japanese band Shonen Knife. Thus funazushi is now very expensive. One fish could cost over 10,000 yen.

Those look like absolutely wonderful plates of sushi! While I have always looked at your posts and licked my lips hungrily, I must say now that I am officially jealous! I have to come to Japan sometime!
